Gluten-Free Cookies Just Like Mom Used to Make

When you make the decision to be health conscious, there are some things you just miss. You miss the simple pleasure of eating foods that you know are just downright bad for you. If you’re going gluten-free, you feel like it’s the end of your favorite foods…right? No! Follow this recipe if you want delicious melt-in-your-mouth cookies that are a-ok for all the gluten-free people in your family.

Double Chocoloatey Chip Cookies

Ingredients list

 

½ tsp. baking powder

1 tsp baking soda

2 1/4 cups Gluten-Free All-Purpose Baking Flour

½ tsp. salt

¼ tsp. xanthan gum

½ cup dark chocolate

¾ cup soy butter

¾ cup brown sugar (raw)

2 eggs

2 cups Gluten-Free semi-sweet chocolate chunks

2 tsp. gluten-free vanilla extract

 

Direction

  1. Preheat the oven to 375 degrees.
  2. Combine flour, baking soda, baking powder, xanthan gum and salt into food processor. Remove to medium bowl and set aside.
  3. Combine brown sugar, butter, and raw chocolate into food processor bowl. Blend until creamy. Add eggs and vannila. Continue blending until well mixed.
  4. Gradually add flour mixture until well-mixed.
  5. Remove mixture from processor to mixing bowl. Add chocolate chips.
  6. Drop dough onto nonstick cookie sheets by the tbsp. full.
  7. Let bake for 9-12 minutes.
